University of Minnesota Duluth Main Production Kitchen

The Residence Hall Dining Center, constructed in 1974, required a significant renovation to better serve the current student population and their diverse dietary needs. Originally designed for 5,578 students, the facility now accommodates nearly 12,000, leading to slow processing times during peak meal hours due to its outdated layout. 

This project expanded the servery to incorporate new equipment and modern culinary concepts. Additionally, the renovation ensures that the facility meets current building codes and includes adequate utility infrastructure to support the new design.
